Apple Pancakes

  • 3 apples, peeled, cored and finely shredded
  • 1/4 cup fresh lemon juice
  • 1 cup sifted flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 3T brown sugar
  • powdered sugar with cinnamon
  • 1 cup sour cream or plain yogurt
  • 4 egg yolks
  • milk
  • 4 egg whites, beaten
  • butter

Shred the apples into a plastic container or bowl with an airtight lid so they won't darken, and marinate them an hour sprinkled with juice. Sift the flour with the dry ingredients, and combine with the sour cream mixed with the egg yolks. If necessary add a little milk to make a medium thick batter; add the apples and marinade. Fold in the stiffly beaten egg whites. Fry the cakes, small or large, in butter. Sprinkle the top with a mixture of powdered sugar/ cinnamon. Serves 4.
